Our Perch is a round fish sourced from the North Carolina coast. We weigh the entire fish, clean, gut, and cut per your request. Our perch fish is not available all year around and arrives in a medium size with 1 ranging about 1/2 pound. When filleted you can yield 1 boneless skin-on piece. Each whole fish that is fabricated will be returned with it’s center bone to lessen food waste. Feel free to make fish stock, soup, or fertilize your garden with the center bone.
